Chicken Moin Moin

This recipe came to me while exercising. I wanted moin moin in a different way with a different taste. I quickly checked thru my freezer and was pleasantly surprised to find the finest pair of Chicken breast.....the rest is history. . This meal made what would have been a boring weekend turned out simply divine. I didn't use any bullion cubes cos I seasoned this with a rich and flavoured full chicken stock. So here's my quick and easy recipe. Try our and let compare notes. 👌👍🙏
Cooking Instructions

Season the soft chicken breast with, chopped onions, garlic, black pepper curry masala, thyme, salt and fresh curry leaves chopped. Cook till very tender. And sieve out the chicken stock and set aside. Now using a processor, shred the chicken breast to pieces like minced meat and set aside.

Put peeled beans, red chilli peppers, onions in a blended, add water and blend into a smooth fine texture. Pour out into a mixing bowl....pour in the chicken stock, and minced chicken vegetable oil, and warm water....mix up the mixture very well...tasted for salt....

Oil your moin moin cups, place in a pot of boiling water, scoop the moin moin batter in the cups, a little bit about half way. Once all the moin moin cups are filled...use a foil to cover up the pot, this helps traps the steam in the pot...steam the moin moin for 25 -30 mins. And once it's ready, removed from pots...

Serve and enjoy with pap or coleslaw or oats. I had mine with coleslaw and it was just simply delicious😋👌🥂🍾
