After buying many many cans of boiled peanuts and “doctoring” them up, I decided to give it a shot from scratch. And we have a winner! It’s does take a full day or an overnight but they are definitely worth it. Give it a shot!

Ingredients

  1. 2.5 lbsraw peanuts in the shell
  2. 6 cupschicken broth
  3. 2 cupswater
  4. 1/2 cupCajun seasoning
  5. 1/4 cupsalt
  6. 4 tbscrab boil concentrate
  7. 5large cloves garlic, roughly chopped
  8. 2habaneros, sliced

Cooking Instructions

  1. 1

    Place all ingredients into an Instant Pot / Pressure Cooker and cook on High for 1 hr. and let pressure reduce naturally. Keep on “keep warm” for 8 hrs.

    After 8 hrs, open and check the peanuts for your desired consistency. I don’t like them too crunchy but also not mushy. I cooked them on high another 30 minutes and again let the pressure reduce naturally. Presto!
