I just want to share my own experiment of banana bread using pancake mix without sugar because bananas already sweet taste as well as the pancake mix and still taste better especially for those avoiding sugar and too much sweet.
Cooking Instructions

Mashed bananas in a bowl then mix butter/margarine.

Followed by 2 eggs one at a time and then pancake mix until the batter is smooth without bubbles.

Baked at 170-180C for about 30-45 minutes depends on what kind of pan you used.

I had a black banana that I forgot for a while and leftover yogurt in the fridge. I thought they should be ok once they are cooked, so I made steamed bread using them and pancake mix. It turned out light and mildly sweet.I used 12 small cups this time, and I steamed them for 7 minutes, but if you are using larger cups, increase the steaming time. Brioche usually has plenty of butter, but by using coffee creamer I've reduce the butter.If you put the bread case itself on the scale to weight the ingredients, it cuts down on washing afterwards.About the coffee creamer: there's soy and milk-based types.
