Ratio:
2 small bananas : 1 large egg
1 large banana : 2 eggs

Would you believe these pancakes are made with 2 ingredients only?! Yes you read it right. Its healthy, a combination of fruit and protein. No need for sugar since bananas are naturally sweet. You can also try adding some chocolate chips or dress them with syrup on top.

They are pretty simple to make but its quite tricky especially the flipping part. I find it very important that you brush your pan with butter. Keep them small about 3inches so it would cook quickly and easier to flip. Before flipping, make sure the edges are set and the middle starts to bubble. Gently, and slowly lift half of the pancake and flip!

Ingredients

  1. 2ripe bananas
  2. 1large egg

Cooking Instructions

    Mash bananas using a fork or masher. Continue mashing until there are no large lumps. But i prefer to leave some small lumps for texture.

    Beat the egg then pour over to the mashed bananas and mix well. So the consistency is like a scrambled egg not like your regular pancake batter.

    Butter your pan and pour your banana mixture in low heat. Remember to keep it small about 3 inches wide.

    Check the edges if they are all set before flipping. If edges are set and the middle part starts to bubble, gently and slowly lift half of the pancake then flip!

    Serve warm.
