Carrot Cake

A simple and easy-to-make traditional American cake that will change your perception of carrots. If you have nuts on hand, feel free to add them for extra texture and flavor.
Cooking Instructions

Preheat the oven to 375°F.

Wash and peel the carrots, then grate them finely.

Mix the dry ingredients evenly (flour, baking powder, baking soda, salt, cinnamon).

Beat the eggs and sugar together until the mixture turns pale (or forms ribbons).

Gradually add the vegetable oil to the egg/sugar mixture from step 3, mixing well each time before adding more.

Add the dry ingredients and carrots to the wet mixture in 2-3 batches, folding until no dry flour is visible.

Pour the batter into a baking pan, tap a few times to remove large air bubbles, then bake for 45-50 minutes (or until a skewer comes out clean).
