Carrot Cake

My parents worked hard from a young age until their last days. Mom wasn't a whiz in the kitchen, but when she took the time, the little or much she prepared was truly amazing. This dessert was made with boxed cake mix and store-bought frosting, adding a few ingredients to make it truly exquisite and delicate. She was so creative in presenting her dishes that almost no one believed she made them with her own hands! I cherish this photo because we made this cake together about 4 years ago, and I'm very comforted to share the recipe with you.

FOR THE DECORATIONS: Lightly beat the egg white with a fork, gradually adding powdered sugar until a manageable consistency is reached. Divide and add the necessary colors. Shape the decorations and let them dry on wax paper or a ceramic plate for a few hours.

FOR THE CAKE: Sift the flour, add the eggs, water, and evaporated milk (you can also use the remaining egg yolk from the decorations). Beat well until there are no lumps. Set aside.

Mix the carrots, raisins, coconut, and walnuts. Sprinkle with the tablespoon of flour and gently fold into the batter.

Using a grater, grate the chocolate over the batter and lightly mix it in.

Pour into a greased and floured pan. Bake at 350°F (180°C) for about 50 minutes or until it passes the toothpick test. Remove from the oven, unmold, and let cool on a rack. Once completely cool, place on a platter and decorate with the frosting.

FOR THE FROSTING: Combine the ingredients at room temperature and beat at high speed for 3 to 5 minutes until fluffy and firm.

Decorate as desired using spatulas and/or piping bags. Arrange the decorations nicely.
