Vegetable curry
One of my favorite vegetarian dish! Perfect to eat with rice.
Cooking Instructions

Mince the onion and cook it in a deep pan with olive oil, curry and ginger until golden-colored, over medium-high heat.

Cut the cauliflower or the potatoes and add it/them in the pan. Mix regularly so it does not burn.

Cut the eggplant in cubes and add it in the pan. Mix again.

Slice the zucchini and add it in the pan. Mix again.

Cut the tomates and add it in the pan. Mix again.

Add salt and pepper.
- 7
Cover and simmer for 30 minutes with 2 tablespoons of water, over medium heat.

Pour the coconut milk in the mixture and cook for 10 more minutes.

I adapted a curry recipe from "vege dining", a website I love.It is free of animal derived ingredients and doesn't use a lot of oil, so it's ideal to feed to small children as well.Add richness using sesame paste. You could probably use peanut butter instead. Adjust the amount of spices to taste. Reduce the curry powder for small children. Try to use preservative and MSG-free ketchup and sauce as much as possible. When I went to India I had such an amazing cheese curry that I literally cried tears of joy. When I came home I wanted to try to re-create it myself so went to the supermarket to buy ingredients when I came across a really nice avocado. So I decided to use that instead of the cheese on a spur-of-the-moment decision.You will still get a delicious curry whether you let it simmer for a long time or not.
