Ingredients

  1. 2 cupsall purpose flour
  2. 3/4 teaspoonbaking soda
  3. 1/2 teaspoonsalt
  4. 3/4 cupunsalted butter, at room temperature (1 1/2 sticks)
  5. 1 cuplight brown sugar, packed
  6. 1/2 cupgranulated sugar
  7. 1large egg
  8. 1large egg yolk
  9. 1 teaspoonvanilla extract
  10. 2 cupschocolate covered peanut butter cupd, cut into chunks
  11. have them refrigerator cold
  12. Decoration for the holidays
  13. as neededred and green holiday decors

Cooking Instructions

13-17 minutes

    Preheat the oven to 350. Line 2 baking sheets with parchment paper

    In a bowl whisk together the flour, baking soda and salt

    In another large bowl beat butter and both sugars until light and fluffy

  4. 4

    Beat in egg, egg yolk and vanilla

  5. 5

    Add flour mixture and mix until just incorporated

  6. 6

    Gently fold in peanut butter chunks keeping them intact

  7. 7

    Roll into 1 inch balls,roll in holiday decors. Place 2 inches apart on baking psheets. Press ball slighty with a spoon or palm of yuur hand,

    Bake for 13 to 17 minutes until light golden. Do not over bake or Cookies will be crisp rather than with a crisp edge and chewy center. Cool 5 minutes in pan then transfer to racks to cool completely

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
