Inspired by my husband's grandmother, tweaked by my mother-in-law and then I decided to sous vide them for the water bath portion for a crispier crunchier pickle.

Ingredients

  1. Brine:
  2. 12 cupswater
  3. 1/3 cupsugar
  4. 2/3 cupcoarse of pickling salt
  5. 4 cupspickling vinegar
  6. In each jar:
  7. 3 clovesgarlic
  8. 1fistful dill
  9. cucumbers (as many as can fit)

Cooking Instructions

  1. 1

    Preheat sous vide water bath to 140F

  2. 2

    Heat brine on stove to boiling

  3. 3

    For each 1L mason jar put in 3 garlic cloves and a fistful of dill before adding cucumbers. Add Brine.

  4. 4

    Process in Sous vide water bath for 2.5 hrs at 140F

2020 I did two 10lb bags of cucumbers from Saskatoon berry farm and tripled the Brine.
This yielded 20 1L mason jars. Processed two batches in the sous vide, placed in a cooler on the garage.
