Ingredients

30-40 minutes
2 servings
  1. for the scallops
  2. 10 ozscallops
  3. 1 tbspAvocado Oil
  4. salt and pepper
  5. GARLIC WINE SAUCE
  6. 2 tbspbutter
  7. 3-4small minced garlic, about 1 Tbs
  8. 1/2 cupwhite wine
  9. 1 tsplemon juice
  10. 1 tbspfinely chopped parsley
  11. 1 Tbsheavy cream

Cooking Instructions

30-40 minutes

    Heat a cast-iron pan over high heat.

  2. 2

    Pat scallops dry with paper towels. Brush with avocado oil and season with salt and pepper.

  3. 3

    Add the scallops a few at a time to the hot pan and fry for 2-3 minutes per side until they are brown and seared on both sides.

    Remove from the pan and keep warm.

  5. 5

    Melt the butter in the pan then add the garlic. Allow to cook for 30 seconds then pour in the white wine, lemon juice, and parsley.

    Bring the sauce to a simmer then cook until the sauce has reduced slightly.

    Add a Tbs heavy cream and stir.

  8. 8

    Add the scallops back into the pan and allow to heat through.

  9. 9

    Serve with rice and a Chardonnay.

Retired at age 55 and enjoying the mountains. I'm now 72, married for 50 years. :) I love to cook but I don't care if ingredients are Organic nor GMO, Gluten-free, low calorie, or low Cholesterol! And Never use low/no-Fat as I enjoy good food. I never take procedural pictures as most cooks know how to boil water and stir sauces.
