Lentil Vadas are a popular Indian snack and made with varieties of dal.Here Urad (White Lentils) and Moong( Yellow Lentils)Dal are soaked and ground to make a flavourful and spicy batter with onion,spring onion greens and other ingredients like green chillies,coriander and curry leaves and deep fried into vada.These are then served hot and crisp with coconut or green chutney or with sambar in breakfast or as a teatime snack.

Ingredients

  1. 1 cuphusked urad dal
  2. 1/4 th cup moong dal
  3. 2 tbspspring (green)onion finely chopped
  4. 1onion chopped finely
  5. 3green chillies chopped finely
  6. 1 tbspcoriander chopped finely
  7. 1 sprigcurry leaves crispy fried
  8. 1/4 th tsp baking powder
  9. as per taste salt
  10. 1/4 th tsp mustard and cumin seeds
  11. As neededoil for deep frying
  12. for coconut chutney:
  13. 1/2 cupcoconut ground
  14. 1.5 tbsproasted peanuts
  15. 1green chilli
  16. 1 tsptamarind pulp
  17. as needed salt
  18. 1/2 tspMustard seeds
  19. 1/2 tsproasted husked urad dal
  20. 1 tspfried curry leaves
  21. 1 pinchasafoetida

Cooking Instructions

    Soak urad and moong dal overnight. Next day drain water,add baking powder and grind to a fine paste adding few spoons water.Add salt to taste.Whisk the batter till light and fluffy.Check by dropping a spoon of batter in water.If it floats instantly,its done.Chop finely all the ingredients mentioned.Add to the ground paste and whisk to mix well.

    Heat oil in a wok or deep frying pan and drop a tablespoon of batter and fry in medium flame till golden and crispy outside and soft inside.

    Serve golden fried dal vada (lentil fritters) with coconut or green chutney or sambar.

    For coconut chutney: Remove the brown skin and grind coconut with peanuts,1 green chilli,tamarind paste,salt to taste and little water.Heat 2 tsp oil and sprinkle mustard, asafoetida and urad dal.Add fried curry leaves and pour the coconut mix and give it a boil. Serve coconut chutney with vada,dosa or fritters of choice.

    These golden fried lentil fritters or dal vada with spring onion can be enjoyed in breakfast or as a teatime snack.
