This beet salad is a very different (read: healthier ;) ) version of the beet salad I knew growing up in Newfoundland. It takes a bit of time in terms of prepping your ingredients (mainly the beets and carrots), but it's worth it.This is a great summer salad to serve with a BBQ, or on its own as a lunch. You can adjust the ingredient amounts for lesser portions- this salad serves approximately 6-10 servings if used as a side dish.

Great healthy salad. Red beets have all the necessary antioxidants and betaine which are very good for your immune system. The combination with chickpeas tastes great! Add feta or any other type of cheese as an extra :-)

Roasted beet and goat cheese salad is a pretty standard salad these days for which you can find hundreds of recipe variants. This is just how I make my own. Many recipes call for walnuts, but you won't find them in my version as I'm not a fan of nuts in salads.
