Seared scallops with pineapple

Ingredients

About 30 minutes, total
2 servings
  1. 8 ozSea Scallops, about 6 large
  2. Olive oil
  3. 1/2 Tbsfinely chopped Garlic
  4. Red Pepper flakes to taste. It called for 1/2 tsp but 1 Used <1/8 tsp
  5. 1 tbsdiced Red Bell Pepper
  6. 6 ozdry White Wine
  7. 1/2cup+ chopped Pineapple
  8. 2 ozSpaghetti, cooked
  9. salt and pepper

Cooking Instructions

About 30 minutes, total

    Heat a pan and coat with olive oil.

    Add the Garlic, Pepper flakes, and Red Bell Pepper, saute for the Garlic to sweat, then add the wine.

    Simmer until the wine has been reduced.

    Add the Pinapple, stir well and set aside, keep warm.

    Dry the Scallops and lightly salt and peper.

    Heat a heavy or cast iron pan and add Olive oil, heat to almost smoking, around 400f.

    Sear the Scallops, three at a time for about 2 minutes until browned.

    Turn and cook the other side for about 2 minutes.

    Place the Pasta on individual plates with the Scallops and pour over sauce.

    Might be good with Riesling or a mild white wine.

Retired at age 55 and enjoying the mountains. I'm now 72, married for 50 years. :) I love to cook but I don't care if ingredients are Organic nor GMO, Gluten-free, low calorie, or low Cholesterol! And Never use low/no-Fat as I enjoy good food. I never take procedural pictures as most cooks know how to boil water and stir sauces.
