Ingredients

  1. 3.5 lbPork belly
  2. BBQ rub
  3. 1/2 cDark brown sugar
  4. 1/4 choney
  5. 1 1/2 Sticksbutter
  6. BBQ sauce

    Cut pork belly into 1.5 inch cubes

  2. 2

    Apply favorite BBQ rub

  3. 3

    Place seasoned pork belly cubes in disposable aluminum pan

  4. 4

    Smoke at 250°-275° uncovered for 2.5 hrs

  5. 5

    Sprinkle dark brown sugar, drizzle honey and then slice the sticks of butter and place all around the top of the pork belly cubes.

    Cover pan with aluminum foil and smoke for another 1.5 hrs

  7. 7

    Drain the glaze from the pan and then toss with favorite BBQ sauce

  8. 8

    Smoke for another 5-10 mins uncovered
