Ingredients

  1. Poori :-
  2. 2 cupsmaida
  3. 1/2 tspsalt
  4. 4 tbspoil
  5. 1/8 tspsugar
  6. Lukewarm water to knead
  7. Oil for deep frying
  8. Aaloo bhijya :
  9. 2potatoes peeled and cubed
  10. 1 tspsabut dhaniya
  11. 1 tspcumin seeds
  12. 1/2 tspkalonji
  13. 1 tspred chilli flakes
  14. 1/2 tsphaldi
  15. 1 tspsalt
  16. 2 tbspoil
  17. 1 pinchyellow food colour
  18. 2 cupswater
  19. Cornflour as required
  20. Cholay ka salan :
  21. 2 tbspoil
  22. 1 tspcumin seeds
  23. 1/2 tspred chilli powder
  24. 1/2 tspred chilli flakes
  25. 1 tbspoil
  26. 1/2 tspkashmiri red chilli powder
  27. 1 tspsalt
  28. 1/4 tsphaldi
  29. 1.5 cupsboiled chickpeas
  30. 1 cupwater
  31. Cornflour as required
  32. Sooji halwa :
  33. 1/2 cupsemolina
  34. 1/4 cupghee
  35. 2green cardamoms
  36. 1 cupsugar
  37. 1 cupwater
  38. 1/4 tsporange colour
  39. 1/4 tspbesan
  40. 1 tbspdesicated coconut

Cooking Instructions

    For pooris mix all the ingredients and form a dough by adding lukewarm water gradually

    Set aside for 10 minutes then feep fry in hot oil.

    For aloo bhujiya put everything in a pot except cornflour and let it cook until potatoes are tender.

    Add cornflour to thicken the bhujiya

    For cholay fry cumin in oil.

    Then add spices and chickpeas and cook for 10 minutes

    Add water and let it cook until chickpeas are softer

    Add dissolved cornflour to thicken it.

    Prepare tarka by adding oil and kashmiri chilli together

  10. 10

    Pour over the chickpeas curry.

    Prepare sooji halwa. Melt ghee in a pot and add cardamoms

    Add sooji and cook for a minute

  13. 13

    Then add desicated coconut and besan.

  14. 14

    Prepare sheera by adding sugar and water and cook until sugar is dissolved

  15. 15

    Now add this sheera to the sooji pot

  16. 16

    Add food colouring and cook until sooji is tender and ghee separates

  17. 17

    Serve hot

    Prepare a platter by serving all quantities and enjoy
