  1. For Soup-
  2. 2 cupschopped spinach leaves
  3. 1Big cucumber
  4. 1 tablespoonoil
  5. 1 teaspoonblack pepper
  6. 2 tablespoonsFresh cream
  7. 2 cupswater/ vegetable stock
  8. 1/2 teaspoongarlic crushed
  9. as per tasteSalt
  10. forGarnishing-
  11. as requiredFeta cheese cubes cut into small piece
  12. fewMint leaves

Cooking Instructions

    Firstly boil the spinach. Once its cool grind it to a smooth puree.

    In a pan heat the oil, add crushed garlic saute for few seconds and then add the spinach puree and water. Let it boil few minutes. Add salt and the black pepper. once its boiled add the fresh cream. (Be careful while adding salt as spinach needs less salt and also feta cheese is salty)

    To make the cucumber noodles we first wash the cucumber properly and the remove both the ends. with the help of the spiral peeler as shown make long thin cylinderical slices like noodles.

    While serving add the cucumber noodles in the bowl of soup and top it up with some feta cheese and mint leaves.

    Tip:
    You may add a green chilli if you like your soup a bit spicy. And also do not make the soup too thick let it be of medium consistency
