Cooking Instructions
- 1
First you have to make the filling.
- 2
Heat oil in a skillet or wok over high heat. Add shallot and garlic, stir quickly, then add chicken. Cook, breaking it up as you go, until it turns white.
- 3
Add carrot and cabbage. Cook until vegetables are wilted. Add salt, a little bit of sugar and pepper, cook until the liquid is gone. The Filling should not be watery, it should be kind of dry (watery filling = soggy spring rolls). Give a taste. Add more seasoning as needed.
- 4
Add green onion. Give a couple of stir. Turn off the heat.
- 5
Cool the filling. The filling can be made a day before.
- 6
Making the wrappers :
Put all the ingredients for the wrapper in a blender. Process until you get smooth batter. The texture batter should be like crepe batter. Take about 1/4 cup of batter and put aside. This is going to be used to "glue/seal" the spring rolls. - 7
Prepare the 9 in flat bottom non-stick pan. Brush the pan with a little oil.
- 8
Preheat the pan with very low heat. Don't get the pan too hot because the batter won't be able to spread on the pan.
- 9
Pour about 1/4 cup batter into the pan and cook over low heat. Turn pan immediately from side to side to form an even circle. Cook for about 1-2 minutes per side. Remove from heat and stack them.
- 10
Place the wrapper with the smooth side down. Place the filling on the bottom. Top with 4 slices of hard boiled egg. Roll up halfway, fold sides in, then finish rolling. Use the batter that you put aside to seal.
- 11
Pour enough oil in a wok or large saucepan so it is double the height of the spring rolls. Heat on medium high until hot - stick a bamboo chopstick or wooden spoon handle in, if rapid bubbles appear, then it's hot enough.
- 12
Carefully place spring rolls in the oil (about 4 - 5 at a time) and cook, turning occasionally, until deep golden. Transfer to paper towels to drain.
- 13
Repeat with remaining spring rolls. Serve while hot with Sweet and Sour Sauce!
- 14
Note :
You do not need to always fry this spring rolls. My preference is to eat them fresh without deep frying them.

Fresh Spring Rolls Fresh Spring Rolls
I love fresh spring rolls, so I make them with ingredients that we always have at my house. Using boiled eggs or shrimp turns them into colourful and gorgeous fresh spring rolls. This time I used canned young (mini) corn, but crab-flavoured kamaboko and okra taste delicious and also look beautiful when the spring rolls are sliced in half. It's quicker to rehydrate the rice paper wrappers in hot water, but if they get too soft, they are hard to handle. So I think it's better to rehydrate them in cold water until you get the hang of it to avoid mistakes. If the rice paper wrappers are still too stiff to roll, wait a little until the moisture from the ingredients soften them. They will soon be soft enough to use. For 10 rolls. Authentic Spring Rolls with lots of Veggies Authentic Spring Rolls with lots of Veggies
I used to help make these when I was little, so it is a memorable recipe for me.I made the flavor mild so you can gobble these up. The ingredients are thickened with potato starch flour, so they won't fall apart. It's easier to wrap, and easy to eat. Please feel free to add bamboo shoots, spinach, or whatever you have available at home. For 10 rolls. Recipe by LaLaHappy1 cookpad.japan -
An Easy Quiche Using Spring Roll Wrappers An Easy Quiche Using Spring Roll Wrappers
The basic recipe is a crustless quiche we have at our house that we call "western style chawanmushi" (steamed savory custard). I recently saw in a magazine a quiche using spring roll wrappers for the crust, so I transformed our family's 'western style chawanmushi' into a quiche. You can make this quiche using a real pie crust instead of the spring roll wrappers, or even without a crust. You can use pizza cheese instead of the sliced cheese. Crispy Basic Spring Rolls Crispy Basic Spring Rolls
These are the spring rolls that I've been making for a long time now. They taste great filled with harusame noodles too.If the fillings have too much water content then the spring roll wrappers will tear easily and the oil will spit more, so please soak up any excess moisture with katakuriko. If you wrap the fillings while they're still too hot, the spring roll wrappers could get damaged so please make sure to let them cool sufficiently. Recipe by Yuuyuu0221 cookpad.japan -
Fresh Spring Rolls with a Delicious Sauce Fresh Spring Rolls with a Delicious Sauce
I love fresh spring rolls but I'm not too fond of sweet chili sauce...so I combined my favorite seasoning ingredients to make this delicious dipping sauce.Even people who don't like vegetables will eat them served like this, so it's a great way to try out all different sorts of vegetables. When rehydrating the wrappers, it's best if you take them out while they are still a bit firm, since the moisture in the wrapped vegetables will soften them some more and make them just right. If they are still too hard try spraying them with water using a mister or spray. You can also try lightly brushing some water on them. Recipe by Taberunba cookpad.japan -
