Ingredients

  1. 1/2Chicken (I used thighs) cut into medium pieces
  2. 1Lime (optional, I added this)
  3. 2Medium Carrots
  4. 1Potato (optional, I added this) cut as desired
  5. 5 ClovesGarlic (crushed)
  6. 2 StalksLemongrass (crushed)
  7. 3Bay Leaves
  8. 5Kaffir Lime Leaves (remove the stem and split in half)
  9. 3 InchesGinger (crushed)
  10. 2 cmCinnamon Stick
  11. 1 tbspChicken Broth Powder (I used 1 1/2 Maggie Chicken Broth Cubes)
  12. 1 tspSalt
  13. 1 pinchSugar
  14. 1 tbspGround Pepper (I used 1 tsp)
  15. 1 literWater
  16. 2 StalksGreen Onions (roughly chopped)
  17. 2 StalksCelery (roughly chopped)
  18. Fried Shallots to taste

Cooking Instructions

    Prepare the ingredients. Clean the chicken and drizzle with lime juice, let it sit for 10 minutes, then rinse thoroughly.

    Prepare a pot, pour in the water, and add the chicken. Cook until tender.

    While waiting for the chicken to become tender, sauté the spices. Heat the oil, then sauté the garlic until fragrant, then add lemongrass, bay leaves, kaffir lime leaves, ginger, and ground pepper. Sauté until wilted, then remove and set aside.
