#Mycookbook Delish soup that I've been perfecting over the past couple years. Play with the amounts of your favorite ingredients to make it your own. I love lemongrass and ginger so I tend to add a bit more than outlined below. .. Also you could use your fave red curry paste in place of the sambal :)

Ingredients

  • 2 teaspoonscanola oil
  • 1 cupsliced mushrooms
  • 1/2 cupdiced red bell pepper
  • 4 tspminced fresh ginger
  • 4garlic cloves
  • 1lemongrass stalk
  • 2 tspsambal (fresh chili paste)
  • 3 cuplow sodium chicken stock
  • 1 1/2 cupcoconut milk
  • 2 cupshredded chicken (I use white meat)
  • 1/2 cupchopped green onion
  • 1cilantro and fresh lime to garnish
  • 1 1/2 tspfish sauce
  • 1/4 cuprice uncooked.. added with the chicken stock. it will cook in the soup
  • 1 1/2 tbspthai red curry paste (Or little more if you like)

Steps

  1. 1

    Heat a Dutch oven over medium heat. Add oil to pan; swirl to coat. Add mushrooms and the next 4 ingredients (through lemongrass); cook 3 minutes, stirring occasionally. Add chile and curry paste; cook 1 minute..

  2. 2

    Add Chicken Stock, coconut milk, fish sauce, and rice; bring to a boil. Reduce heat to low; simmer for 10 minutes.

  3. 3

    Add chicken to pot ; cook 1 minute or until thoroughly heated. Discard lemongrass. Top with onions, cilantro, and lime juice
