Simple Mapo Tofu

I wanted to create a mapo tofu that my kids can eat.
I often cook with my three year old daughter. Recipe by Kodomoto Tsukuru Uchigohan
Cooking Instructions

Drain excess water from the tofu for half a day.

Combine the seasonings.

Heat vegetable oil and fry the garlic gently to bring out the flavor.

Add the pork and carrot and stir fry.
- 5
After the meat is cooked through, pour in the mixed seasonings. Simmer to let the meat absorb the flavor.

Add the tofu and leek to simmer. It's done.

My kids (3 year-old and 1 year-old) who love dishes seasoned with tianmianjiang, finished off the plate when I added blanched komatsuna to the dish!

When I used firm tofu for mapo doufu, my children didn't like it. I then used silken tofu and came up with this recipe. They love the fluffy and soft texture of this dish and they always demand for second helpings!My children love mapo doufu made with silken tofu. To avoid breaking the fragile tofu, I usually make the sauce first. I also try not to boil the sauce after adding miso to maintain its flavor. This recipe probably taste nothing like the infamous Sichuan dish because to be honest, I have not tried the original dish. This is a modification of a few recipe I found around the internet. It's yummy regardless.
