Very Simple Mapo Tofu

I looked up recipes for this dish in many cook books and simplified it in this recipe.

The key to this recipe is the combination of ginger, garlic and Japanese leek. You don't have to follow the exact quantity mentioned here. Use as much as you like. In my case, I usually use a rice bowl's worth of chopped leeks. It's important to season the minced pork first, not to add seasonings at the end. Ingredients

  1. 2blocks Tofu
  2. 50 gramsMinced pork
  3. 1cm piece Ginger
  4. 1 cloveGarlic
  5. 1/2The white part of a Japanese leek
  6. 1add (to taste) ☆ Dried red chili flakes
  7. 3 tbsp☆Soy sauce
  8. 1 tsp☆Miso
  9. 1 tsp☆Sugar
  10. 50 ml☆Water
  11. 1☆Katakuriko

Cooking Instructions

    Preparation: 1) Chop the ginger, garlic and white part of the leek finely. 2) Slice the tofu into bite-sized portions. 3) Mix together the soy sauce, miso and sugar.

    Heat vegetable oil in a frying pan. Fry the prepared ginger, garlic, leek and chili flakes. When they start to release their aroma, add the minced pork. Break up the minced pork and fry until crumbly. When the pork turns golden, add the mixed seasonings and let the pork absorb the flavors.

    Stir in the tofu and add water. Bring it to the boil and add the katakuriko to thicken. At the end, sprinkle on a little sesame oil to enhance the flavor of the dish.
