Matcha Sponge Cake Made with Pancake Mix

I love matcha-flavoured desserts, so I tried making an easy matcha sponge cake.
The cake has the gentle aroma of bitter matcha, and a moist and chewy finish.
I use low-calorie margarine, but you can use butter instead! It might have a richer aroma.
Adjust the cooking time to suit your microwave. Recipe by Miho07
Cooking Instructions
- 1
Put the margarine in a heatproof bowl and microwave for 10 seconds to soften.
- 2
Add the sugar, and mix well with a whisk. Mix in the beaten egg and milk.
- 3
Add the pancake mix in batches, and mix until it becomes smooth. Then, mix in the matcha.
- 4
Pour the dough into the silicone steamer and microwave for 3 minutes 30 seconds at 500 W.
- 5
Put the lid on and let it steam for 2 minutes, then take it out of the microwave.
- 6
Remove it from the mould, let it cool down and slice it to finish!

Fluffy Sponge Cake with Pancake Mix Fluffy Sponge Cake with Pancake Mix
I made this for my daughter who has an egg allergy. I think this cake is the closest to a normal sponge cake so far. I baked it the day before, and decorated it the day after, but the cake was still nice and soft. But, since it's so soft, and it may break when you slice in half, so be careful.Just mix. It gets too hot on the middle rack in our oven, so I bake it on the lower rack. But I think this may differ depending on your oven, so just take that as a reference. Bake for longer if needed. I made this because I received a lot of strawberries, and I felt like baking a strawberry shortcake. When whipping the eggs, it's faster if you use a double boiler. However, I wanted to prevent the cake from shrinking when cooling, so I waited until the eggs were returned to room temperature and before whipping them up carefully and slowly. Be sure to go relatively slowly during the last minute of whipping! This will ensure that your cake turns out fluffy and light!Use fresh eggs! Recipe by keikana cookpad.japan -

Easy Matcha Green Tea Pound Cake with Pancake Mix and Okara Easy Matcha Green Tea Pound Cake with Pancake Mix and Okara
To be honest, I wanted to eat matcha castella cakes, but I was too lazy.Mix reeeeeeally well when making the dough.Although this recipe uses granulated sugar, the powdered matcha makes it rather mild, to suit an adult palate. To please children, add more sugar or serve with condensed milk, brown sugar syrup (kuromitsu), or kinako soy flour. For 8 x 17 x 6 cm [3.1 x 6.7 x 2.4 in] loaf pan. I made this matcha sponge cake to make a matcha dome cake.If the warm water to warm the milk and butter cools down, make sure to bring it back to approximately 60℃. You shouldn't mix too much at step 10, but if you don't mix it just right, the butter will sink. You could use regular letter paper instead of parchment paper. For 18 cm [7.1 in] cake pan.
