Ingredients

30 minutes
6-8 servings
  1. 5Eggs
  2. 1 cupBrown rice flour (you can use SR flour)
  3. 375 gZucchini (grated, juice squeezed out of Zucchini)
  4. 1large Brown Onion (diced)
  5. 2Carrots (grated)
  6. 200 gBacon (diced, optional)
  7. 1 cupCheddar cheese (grated)
  8. 1 TeaspoonBaking powder (only use if using Brown rice flour)
  9. 1/4 cupOlive oil

Cooking Instructions

30 minutes

    Preheat oven to 170° celcius.

    Beat eggs in a large bowl until combined. Add the sifted flour and beat until smooth, then add Zucchini, carrot, onion, bacon (cooked crispy before hand), cheese and oil, stir to combine.

    Grease and line a 30x20cm tin. Pour mixture into prepared tin. Bake for 30 minutes or until golden brown and cooked through.

    Note: the Brown rice flour is a gluten free option only....
