I wanted to make an easy-prep, salt-cured cucumber that even children would like. When I used the recipe with the seasoning from shirasu sauce, it turned out delicious. It's now one of my daughter's favorites. For those who like spice, add red chili peppers when curing.Thoroughly dissolve the sugar. Curing for 2 hours gives a perfect crunchiness and the cucumbers become well cured. I think that vinegar dishes taste great in the summer. I substituted the sesame oil from the cucumber vinegar dish that I normally make with mustard, and made a Chinese-style version.Make sure to check the flavor before serving it. I had garlic marinade in soy sauce, so used it on some cucumbers I happened to have at home.I omit red chili peppers from mine since I serve it to my kids, but if you like spicy food, try adding some chili.This can be made with celery as well. Recipe by milk chai

Awesome Sauce

I have been playing around with this recipe for a while now, and I finally decided to sit down and log how I made this sauce. I feel like I have a pretty solid idea down, but I am always open to improvements. This is my first recipe ever, so hopefully you will like it! I hope I can continue to create, share, and find new recipes with this awesome community. Thanks! * P.S. I have been working on the recipe because the 3/4 tbl of garlic powder gives it a strong garlic taste. Try about 1/2 tbl of garlic salt (instead of powder) for less garlic flavor, and more of a refreshing taste if you would like. Thanks and happy mixing! This is great on alot of different things, like grilled meat and veggies. If you use a regular cucumber instead of an English cucumber, be sure to scrape the seeds out before dicing it. Also, if using freshly chopped dill weed instead of dried, use about 1 tbsp.

Easy, but an authentic taste.The tartness of salt-cured plum (umeboshi) is great in this recipe. If using sweet honey-soaked umeboshi, replace the mirin with an equivalent amount of Japanese noodle dipping sauce.Use mentsuyu (Japanese noodle dipping sauce) that's been concentrated about 3-4 times.Adjust the quantity to your liking. I made an overnight pickle with fish sauce, which I don't use that often, and cucumbers.If you prefer lightly seasoned cucumbers, eat this the day it's made.You can make the flavors soak into the cucumbers better if you rub them. Recipe by Kana-

This sauce is based on the cilantro sauce recipe made by Chefs Susan Feniger and Mary Sue Millken from the LA restaurant 'Border Grill'. I changed the quantity of the jalapeño chilli and other spices to suit a Japanese palette.-By sautéeing the shallot and mushroom slowly until golden brown, you can extract the sweetness of the vegetables.-Discard the seeds of the jalapeno chili if you prefer a milder sauce.-If you don't want to bother, just purée the mixture in a mixer, without straining through a sieve.
