That Sauce! Chinese-style Salt Cured Cucumbers

I wanted to make an easy-prep, salt-cured cucumber that even children would like. When I used the recipe with the seasoning from shirasu sauce, it turned out delicious. It's now one of my daughter's favorites. For those who like spice, add red chili peppers when curing.

Thoroughly dissolve the sugar. Curing for 2 hours gives a perfect crunchiness and the cucumbers become well cured. If longer, the seasoning will blend in, but the crunchiness will disappear.

If you peel the cucumbers a little, they will cure more evenly. Recipe by Tsukonindesumasu

Ingredients

  1. 2to 3 Cucumbers
  2. 1 tbspSugar
  3. 2 tbspVinegar
  4. 3 tbspSoy sauce
  5. 1 tbspSesame oil

Cooking Instructions

    Prepare a deep dish and combine the seasonings in the order listed in the ingredients.

    Cut cucumbers first into thirds, then into quarters.

    Add cucumbers to the mixed seasoning and chill in the refrigerator for 2 hours.

    The seasoning will blend well if cucumbers are placed on the dish with the skins up, as shown here.

    If you use a plastic bag, you can cure 3 cucumbers at one time.

    If you slice the cucumbers thinly in round slices and cure them, it will only take 1 hour, and your little ones will find them easier to eat this way.
