Chestnut Cake With Pancake Mix

I received lots of chestnuts, and I made simmered chestnuts for the first time. I really wanted to make something with them, so I made this using pancake mix. It's easy, yet very delicious, so I uploaded it.

When you pour the batter into the cake pan, fill the pan up to about 80%.
Gently tap the pan on a work surface a few times to remove air bubbles from the batter.
If you have a little leftover batter, put it into ramekins or aluminum cups to make mini cakes. Recipe by Kagecchi

Chestnut Cake With Pancake Mix

Ingredients

6 servings
  1. 200 gramsPancake mix
  2. 200 gramsChestnuts simmered in their skins
  3. 20 gramsSugar
  4. 1Egg
  5. 80 mlMilk
  6. 80 gramsButter (or margarine)

Cooking Instructions

    Line a pound cake pan with parchment paper.

    Preheat the oven to 170℃. Mash 100 g of the chestnuts using a fork.

    Put the butter or margarine (brought to room temperature in advance) in a bowl, and cream it.

    Mix in the sugar and add the beaten egg in 2-3 batches. Mix well after each addition.

    Add the mashed chestnuts and mix well. Add the pancake mix and milk to the batter and mix in thoroughly with a spatula.

    Pour the batter into the cake pan. Put 100 g of chestnuts (not mashed) in the middle of the batter if you like.

    Bake in the oven at 170℃ for 45-50 minutes. Check to see if it's cooked by piercing the cake with a bamboo skewer. If it comes out clean, it's ready.

    The baking time varies depending on your oven, so adjust the time and temperature accordingly!
