My favorite comfort soup! Not only is it vegetarian, it’s packed with protein from red and yellow lentils. Add a handful of fresh spinach for a balanced, delicious meal.

My favorite comfort soup! Not only is it vegetarian, it’s packed with protein from red and yellow lentils. Add a handful of fresh spinach for a balanced, delicious meal.
Cooking Instructions

Press the SAUTE button to heat the Instant Pot. When hot, add Ghee, swirl around until shimmering.

Add Cumin seed and Hing. When Cumin Seed sizzles, add Onion, Garlic and Ginger. Mix well, saute 1 minute.

Add Turmeric, Red Chili powder, and Salt. Mix well.

Turn OFF pot by pressing CANCEL.

Add Lentils, Water and Tomato Paste. Mix well.

Pressure Cook on HIGH for 6 minutes. After cooking is complete, RELEASE NATURALLY until float valve drops. (Approx 6 minutes in a 6-quart pot; approx 15 minutes in a 3-quart pot.

Add Garam Masala and a squeeze of fresh lemon. Top with fresh spinach or cilantro if desired. Enjoy!

The Instant Pot has been absolutely invaluable to my family for creating simple tasty meals fast. Amazingly my kids love this pea soup recipe that I put together. I’ve gone pretty heavy on the split peas which means this soup is more of a green mash which I am pretty sure is why they love it. I love my instant pot and I wanted to make a bean soup from dried beans that didn't take all day. From start to finish this recipe took about hour and half between chopping and waiting for pressure to build. Still not bad for a soup that usually takes several hours just soften. The beans in this recipe come out soft, and the liquid is thickened as well by them. This recipe also freezes really well too for up to a month. DMG -

Twas the night before payday, and all through the kitchen, not a meal was in sight, not even leftovers.So I pulled this together with odds and ends. It was way better than I expected. You could probably sub in any veggies you have laying around, or any starch (rice or barley or pasta) instead of lentils and potatoes. That's what's so awesome about soup.Note that I only had about a quarter cup of lentils to use and most of those sunk to the bottom. I'd have used a full cup if I had it, your soup will have more lentils than the picture shows.D. M. C.
