Instant Pot Vegan Split Pea Soup

Getting my kids to eat their veggies can be really challenging and time is usually at a premium when it comes to meal prep. The Instant Pot has been absolutely invaluable to my family for creating simple tasty meals fast. Amazingly my kids love this pea soup recipe that I put together. I’ve gone pretty heavy on the split peas which means this soup is more of a green mash which I am pretty sure is why they love it. Anyhow, I’m not going to question it; just going to count it as a dad win.

Instant Pot Vegan Split Pea Soup

Ingredients

8-10 servings
  1. 1/2 cupextra virgin olive oil
  2. 2medium onions
  3. 2 cupsbaby carrots
  4. 8 stalkscelery
  5. 2bay leafs
  6. 2 tablespoonsminced garlic
  7. To taste salt and pepper
  8. 1 lbsdried green split peas
  9. 8 cupswater

Cooking Instructions

    In true Instant Pot style, chop up all the veggies and put them in the pot along with the rest of the ingredients. With regards to the salt and pepper, how much you add really depends on who you are feeding. I tend to go a little lighter because I like the pronounced pea flavor. My wife likes to go heavy as if there was a piece of ham added. No right or wrong here but just try to target your audience.

    Set the Instant Pot to cook for 30 minutes. Once it is done, let it naturally cool to open the lid. I prefer to leave it on Keep Warm for an hour or so when I have time in order to let the flavors circulate but that is optional.

    After you open the Instant Pot, use a hand blender to purée the soup.
