Caramel Muffins

I bought 200 g of caramel chocolate chips!
I don't normally have heavy cream on hand, so I used milk instead. It was still rich and tasty.

・Do not forget to heat the milk to make the caramel.

Ingredients

6 servings
  1. 1Egg
  2. 40 gramsSoft light brown sugar or white caster sugar
  3. 100 grams●Cake flour
  4. 3 grams●Baking powder
  5. 30 gramsButter
  6. 30 gramsVegetable oil
  7. 50 gramsCaramel chocolate chips or nuts
  8. Caramel
  9. 40 gramsGranulated sugar
  10. 50 gramsMilk

Cooking Instructions

    Make the caramel. Combine granulated sugar and 1 teaspoon of water in a sauce pan and heat until the sugar mixture looks like this. Microwave the milk.

    Turn the heat off and add the warmed milk (be careful of the hot steam!). After the milk is added, the caramel will start to harden...

    Heat over low and stir with a wooden spatula to melt the hardened caramel. It will turn into a glossy caramel color once it melts and blends with the milk.

    Put the butter and sugar in a bowl and beat until pale and fluffy (add a little oil if the mixture is too grainy and difficult to beat).

    Add eggs and vegetable oil and mix well.

    Sift the ● ingredients and add half to the bowl. Mix lightly and add the Step 3 caramel. Mix well, add the rest of the dry ingredients, and stir.

    Reserve some of caramel chocolate chips for the topping and stir the rest into the batter.

    Put the batter into the moulds and scatter the reserved caramel chocolate chips. Bake in an oven preheated to 170ºC for about 30 minutes.

    Decorate with cupcake wrappers. They'll make nice presents.
