Ingredients

  1. 1 slicePeasant bread (any fresh bread will do)
  2. 1-2eggs
  3. to tasteAvocado
  4. to tasteChopped Grape tomatoes (preference sugar bomb)
  5. to tasteEverything bagel seasoning
  6. to tasteThick bacon
  7. Lime juice (optional)
  8. as neededOlive oil
  9. as neededSoftened Butter (for bread)
  10. Salt and pepper (optional)

Cooking Instructions

    Mash avocado, squeeze of lime juice (optional), drizzle light olive oil, mix in chopped tomatoes

    Bake bacon to your preference of crispy

    Heat up a sauté pan to medium heat, Butter bread, cut center out (I use medicine cup, makes perfect size), place butter side down when warm, crack egg into hole (toast the cut out hole on the side) and cook to preference (over medium is my preferred) season with salt and pepper if desired (light in salt as everything bagel seasoning has salt in it as well)

    Put on plate and layer with bacon (about 2-3 pieces) and then place a large scoop of avocado tomato mixture on top and sprinkle with everything bagel seasoning
