Sakura Shrimp Onigiri for Cherry Blossom Viewing

I came up with this spring-themed item to take to a cherry blossom viewing party.

These rice balls are very subtly flavoured in order to feature the taste of the sakura shrimp. Feel free to adjust the amount of soy sauce and mirin. Using dashi stock instead of water adds more umami flavor to the taste of the rice balls. Recipe by Yamamoto rikopin

Ingredients

2 servings
  1. 360 mlUncooked white rice
  2. 100 gramsSakura shrimp (tiny dried shrimp)
  3. 1 tbspSoy sauce
  4. 1 tbspSake
  5. 1 tspMirin
  6. 1Mitsuba

Cooking Instructions

    Rinse the rice and add all of the ingredients except for the parsley to the rice cooker. Fill the rice cooker with water up to the 2 cup mark and set to cook.

    Shape into bite-sized rice balls, then garnish with Japanese parsley or sprigs of sansho to finish!!
