Ingredients

  1. 1.5 cupblack Urad dal/mash dal
  2. 3/4 cuprajma(Kidney beans)
  3. 2 Tbspcooking oil
  4. 2 tspghee
  5. 1/2 tspcumin seeds
  6. 1bay leaf
  7. 2medium onions, finely chopped
  8. 1green chilli chopped
  9. 1.5 Tbspgrated ginger
  10. 1 Tbspgrated garlic
  11. 6small tomatoes chopped finely
  12. 1 tspturmeric powder
  13. as requiredSalt
  14. 1 tspKashmiri red chilli powder
  15. 1/2 tspcumin powder
  16. 2 tspcoriander powder
  17. 1 tspgaram masala powder
  18. Togarnish
  19. As requiredGreen coriander
  20. As requiredFresh cream
  21. 1butter cube

Cooking Instructions

    Mix both the dal and rajma, wash 3-4 times. With sufficient water soak overnight.
    Pressure cook for 2 whistles and then for 5-8minutes on low flame with adding turmeric only. Salt should be added towards the end as it arrests proper boiling and softness of hard dals and beans.

    Take oil and ghee on a pan. Heat, add cumin seeds, bay leaf.

    When seeds splutter and chopped onions, green chili and sauté till golden brown.

    Add ginger, garlic, and tomatoes and saute till tomatoes are mushy. Add all dry masala powder(except garam masala) including salt and half a cup of water. Mix well and allow to boil.

    Mix the garam masala. Saute till oil separates from the masala. Add the boiled dal mix. Adjust water for gravy and seasoning. Cove and cook for 5 minutes after boiling.

    Dal Makhani is ready to serve with rice/roti. Garnish with green coriander, cream, and butter.
