Macrobiotic Pound Cake

I posted this recipe for my own reference. I wanted to eat a sweet snack that leaves me feeling full.

The popular version of this pound cake uses a ripe banana. If the banana is a little hard, microwave it a bit before mashing it.
If the sweetness of the banana alone is enough, omit the sugar.
Use your choice of dried fruit. (Raisins, figs, etc.)
You can substitute cake flour for the whole wheat flour, and regular milk for the soy milk. Recipe by Kamiko

Ingredients

6 servings
  1. 150 gramsWhole wheat flour
  2. 50 gramsRaw cane sugar, beet sugar, or other natural sweetener
  3. 2 tbspBaking powder
  4. 150 mlSoy milk
  5. 1Banana
  6. 1Dried fruit

Cooking Instructions

    To prepare: Mince the dried fruits. Mash the banana till it becomes paste-like. Preheat your oven to 180℃.

    Add all the dry ingredients and mix together well with a whisk.

    Add the soy milk to the dry ingredients, then mix in the dried fruit and banana. Pour the batter into a pan and bake in a oven for 35 minutes at 180℃.

    Once it's done, be sure to leave it in the mold and cover it with plastic wrap.

    After the pound cake has thoroughly cooled, take it out of the mold and slice it.
