Pasta in tomato sauce with peppered goat meat
Cooking Instructions

Boil your pasta with salt according to the direction on the pack,do not over cook until too soft,drain in the colander and reserve one cup of the pasta water.

Add 3 cooking spoon of vegetable oil in a clean pot add in chopped onions and fry until translucent,add in chopped garlic,curry and thyme and fry for 1min to build up flavours.

Add the tomato paste and fry until well fried,you can add in a pinch of baking soda to remove the sourness.add in the the pepper mix and fry.

Add in your seasoning cubes and oregano,pour the reserved pasta water and bring to a boil,adjust the taste and add the drained pasta,stir gently and cover it for a few minutes to warm through.

Boil your goat meat with seasoning cubes,salt,thyme,and onions until soft.fry the meat and drain it.

Put a pan on medium heat and add one cooking spoon of oil,add chopped onions and fry until translucent,add the grated pepper and fry for few minutes,season it and add the fried meat,stir for a minute and it’s done

Serve hot and enjoy !

Tips:the reserved pasta water helps the sauce to stick on the pasta

Ok, I'm always in search of perfection as far as tomato sauce goes... It's my own personal "holy grail." (and please, to any and all "real chefs" out there, if you have any suggestions for this recipe, it would be more than welcome) My grandmother made amazing tomato sauce but died from Alzheimers before I could get the recipe from her. Since then I've been experimenting with this recipe constantly. I've tried numerous incarnations, numerous ingredient variants, etc. I feel as if I still don't have it down to perfection, but I have it good enough that it still yields a decent sauce. FYI: this recipe is for a big batch. I designed and cook it this way because it's simply delectable and is perfect to put in containers, freeze, and have on a night where you're simply too busy to make something homemade.P.
