Toppoki-style Fried Udon Noodles

I tried to make a toppoki dish, but I didn't have rice cakes.
You can use any ingredients you like. I like it better with onion and pork. Adjust the quantity of gochujang. In this photo, I made just one serving, but the recipe is for 2 people. Recipe by Usagi-
Cooking Instructions
- 1
Slice the pork into 1 to 2 cm lengths or bite sizes. Slice the carrot thinly into 5mm to 1 cm widths. Slice thinly the green pepper and onion.
- 2
Heat sesame oil or vegetable oil (not listed) in a frying pan and fry the pork over high heat. After the colour has changed, add the onion and carrot and fry. Then add green pepper and fry quickly.
- 3
Add the ☆ ingredients and frozen udon noodles (without defrosting). Simmer until the udon noodles absorb the sauce and loosened over medium heat.
- 4
Increase the heat and reduce the sauce quickly to coat the udon noodles. Add some black vinegar or normal vinegar if you like and stir quickly.

In a certain famous Okonomiyaki restaurant, they add dried bonito flakes to their griddle-fried udon noodles and I copied that idea for this.Just adding dried bonito flakes enriches the flavor!Use leftover vegetables in the fridge such as cabbage and carrots. Some vegetables give out water, so adjust the amount of seasoning if the taste is still thin and light after adding the Japanese worcestershire sauce and soy sauce. Pork Udon Noodles Pork Udon Noodles
The udon I ate at a restaurant was so delicious that I wanted to try recreating it.For the dashi, you can use iriko dashi or iriko and konbu. The pork is well-seasoned, so it's best if the dashi is a seasoned lightly. Also, pork that is high in fat is more flavorful, but use what you prefer. Recipe by Ojoman cookpad.japan -

I made some stir fried udon when I was visiting friends in Bangkok. They were out of soy sauce so I tried using Thai fish sauce instead. Although people in Bangkok use limes, lemon is a fine substitute. Now I'm very fond of stir fried udon with nam pla.Microwave the udon noodles briefly to warm them up, and untangle them in advance. If you are using frozen noodles, rinse them in water to get rid of any surface stickiness. If you add some fresh coriander, it will taste more like Thai cooking!I recommend adding cherry tomatoes. For 1 serving. Recipe by Wanko mama cookpad.japan -

You can omit the bean sprouts if you'd prefer. If you do use them, increase the amount of flour a bit in order to hold everything together.I've gotten comments that this tends to fall apart, so please take note of this: When you're pan-frying it, cook it as you would prepare okonomiyaki - slowly and patiently. For 2 servings. Recipe by RAN cookpad.japan -

My mother taught me this recipe.1) Every type of kombu dashi is different, so adjust the amount of salt to your liking.2) When making the astuaage, cut it in half and simmer it in inari sushi sauce, then store it in the freezer; this makes it easier to use up the leftovers.Be sure to properly drain the water from the noodles.2) You can also put the noodles directly into the pot. Hearty & Quick Fried Udon with Ginger Pork Hearty & Quick Fried Udon with Ginger Pork
I came up with a good idea of making fried udon noodles with ginger pork. The sweet and savoury flavour of ginger pork matches with the bitterness of radish shoots and hotness of pickled ginger. This combination makes a superb harmony. If you can't obtain radish shoots, use chives, any kind of sprouts or julienned shiso leaves. Recipe by Kyoku cookpad.japan
