Cold soba with dipping sauce

Ingredients

  1. 2servings cold soba noodles
  2. 1 cupdashi/veg stock/ mushroom stock
  3. 1/4 cupsoy sauce
  4. 2 tablespoonsmirin or 1 tablespoon honey mixed with 1 tablespoon water
  5. Finely grated or minced ginger,
  6. Minced spring onion or toasted sesame seeds for garnish

Cooking Instructions

    Bring a large pot of water to a boil, and salt it. Cook noodles until tender but not mushy. Drain, and quickly rinse under cold running water until cold. Drain well. (These noodles cook very fast so keep an eye on it)

    Combine all stocks. Add soy sauce (add a little less than 1/4 cup and then add as per taste). Add honey. Mix well.
    Optional: add mirin (rice wine) instead of or along with honey.
    Optional: add minced ginger.

    Boil the sauce. Top it with garnish.

    Serve. Dip noodles in dipping sauce and eat. You can drink sauce like soup
