For soba or somen noodles.
I think I saw this in the newspaper or a magazine about 10 years ago.
Or at least that's about how long ago I took down the recipe.

For dipping sauce, use this recipe as is. If serving the noodles in the sauce, dilute with 4 times as much dashi stock. Recipe by Pangu-

Ingredients

4 servings
  1. 100 mlMirin
  2. 400 mlWater
  3. 100 mlSoy sauce
  4. 1 pinchBonito flakes

Cooking Instructions

  1. 1

    Put the mirin in a pot and bring to a boil (to evaporate the alcohol).

  2. 2

    Add water and agitate the pot to mix, then add the soy sauce.

  3. 3

    Add the bonito flakes, quickly agitate the pot to mix, then boil for 1-2 minutes (it will turn cloudy if you mix it).

  4. 4

    Turn off the heat, then strain when the bonito flakes sink to the bottom.
