It smelled fragrant and unique. My stew turned out even better. Last night, I made a clear broth fish soup with a few modifications to suit my taste. I added turmeric, galangal, and bay leaves to the recipe from Ira. I cut the fish as usual for cooking fish stew. It's delicious and yummy.   9. 5-7red chilies, mixed with bird's eye chilies

  11. 2green onions
  12. 2-3 stalkscilantro
  13. 1 teaspoonfine salt
  14. 1/2 teaspoonbroth powder or seasoning, if desired
  15. 1lime or 2-3 key limes for marinating the fish
  16. 1-2 tablespoonscooking oil for sautéing sliced spices
  17. 2 1/2 cups(about 500 ml) water

    Prepare the ingredients.

    Clean the fish thoroughly, then drizzle with lime or key lime juice to remove any fishy smell and freshen it up. If desired, let it marinate for about 10-15 minutes.

    Peel and wash all the spices, slice the ginger, turmeric, and galangal. Crush the lemongrass. Slice the onions, cilantro, green onions, and tomato. I cut the chilies without separating them.

    Sauté the shallots and garlic with just a little oil. I sauté them directly in the pot for making the soup. Once fragrant, add the sliced turmeric, ginger, galangal, lemongrass, and the cut chilies.

    Add the bay leaves, stir until the bay leaves wilt. Then add about 2 1/2 cups of water.

    Let it boil and the spices become fragrant for about 5 minutes.

    Add the fish pieces, discard the lime peel and seeds first.

    Cook until the fish is done and blends with the spices, about 7-8 minutes. Add fine salt, broth powder, or seasoning if desired. Adjust the taste.
