  1. 1.1 lbschicken thighs/drumsticks
  2. 4 1/4 cupswater
  3. 0.7 ozsliced galangal
  4. 0.7 ozcrushed cilantro roots
  5. 0.9 ozgarlic
  6. 2pandan leaves
  7. 5star anise
  8. 2cinnamon sticks
  9. 1 1/2 tspblack peppercorns
  10. 1 tbsprock sugar
  11. 3 tbsplight soy sauce
  12. 1 tbspsweet dark soy sauce
  13. 2 tbspoyster sauce
  14. 1 tbspseasoning sauce
  15. 5.3 ozdaikon, peeled and cut into pieces
  16. 3.5 ozdried rice noodles
  17. 7 oznapa cabbage or other greens
  18. Seasonings
  19. 2 tspfried garlic
  20. 1-2 tspchili flakes
  21. 1/4 tspground pepper
  22. 2 tbspchopped cilantro

Cooking Instructions

    Put water in a pot and bring to a boil. Add sliced galangal, cilantro roots, garlic, pandan leaves, cinnamon, star anise, and black peppercorns. Season with rock sugar, light soy sauce, sweet dark soy sauce, oyster sauce, and seasoning sauce.

    Once the water is boiling, add the chicken. Reduce to low heat and add the sliced daikon. Simmer on low heat for 1 hour or until the meat is tender to your liking.

    Gently remove the chicken pieces to avoid tearing the skin. Remove the daikon. Strain the broth through a sieve to remove the spices.

    Return the strained broth to the pot. Add the chicken and daikon back in. Keep the broth warm over low heat.

    In a new pot, bring water to a boil. Blanch the noodles and remove. Blanch the vegetables and remove.
