Cooking Instructions

Put water in a pot and bring to a boil. Add sliced galangal, cilantro roots, garlic, pandan leaves, cinnamon, star anise, and black peppercorns. Season with rock sugar, light soy sauce, sweet dark soy sauce, oyster sauce, and seasoning sauce.

Once the water is boiling, add the chicken. Reduce to low heat and add the sliced daikon. Simmer on low heat for 1 hour or until the meat is tender to your liking.

Gently remove the chicken pieces to avoid tearing the skin. Remove the daikon. Strain the broth through a sieve to remove the spices.

Return the strained broth to the pot. Add the chicken and daikon back in. Keep the broth warm over low heat.

In a new pot, bring water to a boil. Blanch the noodles and remove. Blanch the vegetables and remove.

Serve immediately. Top with fried garlic, chili flakes, and cilantro. A tip for those in colder climates: warm your bowl in the microwave for about 30 seconds before serving.
