Miso Soup with Spinach and Poached Egg

This is my family's standard miso soup. My mother often used to make it.
The eggs will spread if you add them to the water first, so add the spinach first and you shouldn't have any problems. Recipe by Yuuyuu0221
Cooking Instructions

Boil some water in a saucepan, and make the dashi stock with bonito flakes. Chop the spinach finely and add it to the saucepan. Break the eggs into the saucepan too.

Put the lid on, and let it simmer over low heat until the egg whites harden. Add the miso and transfer to serving bowls.

Since then it's become one of my favorite dishes to make.Place the mushrooms in cold water (don't start boiling them with hot water) and simmer them very gently to extract their umami.
