Broccoli with Fluffy Omelette and Ankake Sauce

I wanted to make a hearty dish with broccoli.

The broccoli here is easier to eat if it's tender.
In Step 3, let the sauce come to a boil again after adding the katakuriko dissolved in water. In addition, if the egg gets stuck to the bottom of the pan it will burn, so stir it up gently to prevent that.

Ingredients

4 servings
  1. 1 smallbunch Broccoli
  2. 2Eggs
  3. 300 mlA. Water
  4. 1 1/2 tbspA. Chinese soup stock
  5. 2 tspeach A. Sake, sesame oil
  6. 2/3 tspA. Oyster sauce
  7. 1 dashA. Salt
  8. 1 dashKatakuriko slurry

Cooking Instructions

    Divide the broccoli into small florets. Sprinkle with salt, put into a microwave steaming dish, add 4 tablespoons of water, and microwave for 4 minutes.

    Turn the broccoli over and microwave for an additional 2 minutes. Leave the lid on (the broccoli should be tender).

    Put the A. ingredients in a pan and bring to a boil. Add the katakuriko dissolved in water and bring to a boil again. Add the beaten egg in several batches, stirring in between additions.

    Put the steamed broccoli on a serving plate, and pour the egg-ankake sauce mixture on top.
