Strawberry Carrot Sponge Cake

On sunday, after service, I.followed a sis shopping, while shopping, we talked about food and she bought this pureed strawberry from the supermarket and gifted me a pack to try out.
I wanted to make carrot cake for my Butterscotch as school snack, the foodie in me decided to combine both and this cake was born there and then
The combo is not your everyday combi but trust me , when I say it came our super fluffy, light and really yum.😋
So lemme quickly share this easy breezy recipe and hope you will give it a try.

Cooking Instructions

Pre heat oven,..
Add the butter and brown sugar into a mixer, mixer till fluffy and light in texture.

Break in the eggs one after the other and keep mixing.

Sieve the flour, with baking powder, bsking soda, salt, cinnamon and set aside.

Next fold in the grated carrot aintonthe batter, do same with the pureed strwberry...fold everything in properly.

If too thick, pour in a ⅓ cup of water. And mix well...
Next pour batter into an an already buttered baking pan

Once cake is ready, remove from pan and set on a baking rake to cool.

This cake is everything, I whipped some cream spread it onto and it was totally a hit.

But we no for hold hand, we ate it all at once.🤣🤣🤣🤣
I think the combo of brown sugar, carrots and strawberry gave the cake this colour..

Pour in the buttermilk and apart of the flour and mix....keep foing this till you exhaust the flour and buttermilk.

Baked in a heated oven for 40mins or until a tooth pick comes out clean.
