Refreshing! Crispy Chinese Cabbage Salad

When I ordered a hearty meal at a local restaurant, the owner gave me a salad like this for free, saying it would be refreshing. It was so good, I just had to try making it myself.

It's even tastier if you use the thick part of the cabbage.
Adjust the dressing amounts as you like.

Ingredients

2 servings
  1. 1/4Chinese or napa cabbage
  2. 1Beni-shouga pickled ginger (optional)
  3. For the dressing:
  4. 6 tbspVinegar
  5. 5 tbspSugar
  6. 1sprinkle Salt

Cooking Instructions

    Cut the cabbage It's fine to shred it finely or chop it roughly!

  2. 2

    Soak it in ice water. Give it time to soak to mellow out the flavors of the cabbage This will also give it a crunchy texture!

    Strain well.

    Mix the dressing in well.

  5. 5

    Transfer to a serving plate and enjoy! Top with pickled ginger for an even more refreshing taste!
