  1. 250 gramssmall round eggplants
  2. 2 tablespoonsmustard oil
  3. 4 clovesgarlic, finely chopped
  4. 1/2 teaspooncumin seeds
  5. 2 pinchesasafoetida
  6. Salt to taste
  7. 1/2 teaspoonchaat masala
  8. 1/4 teaspoongaram masala powder
  9. 1/4 teaspoonturmeric powder
  10. 1/4 teaspoonchili powder
  11. 1green chili, finely chopped
  12. 1/2 teaspooncoriander powder
  13. 1/2 teaspoonfennel powder
  14. 1/2 teaspoondried mango powder (amchur)

    First, wash the eggplants and cut them into two to three pieces each, keeping the stems intact. Heat oil in a pan, add asafoetida and cumin seeds, then sauté the garlic and fry the eggplants well.

    Add all the spices except dried mango powder and garam masala, and fry well. Cover and cook for 2 to 4 minutes. Finally, sprinkle dried mango powder, garam masala, and chaat masala on top. Serve the hot masala eggplant with parathas or roti.
