Skipjack Tuna with Teriyaki Sauce
I had a craving for a spicy teriyaki sauce, so I used handy katsuo-no-tataki and seasoned with spicy teriyaki. I'm posting it here since it turned out so tasty. It's key to remove the excess oil with a paper towel. That way, it won't turn out too oily. This recipe makes plenty of sauce. If you have leftover sauce, it goes great as topping for deep-fried foods, okonomiyaki (Japanese pancakes), or yakisoba (stir-fried noodles), etc.Use the sauce recipe for when you run out of okonomiyaki sauce! For 2 servings. Recipe by Pabuchan

Mike's Shrimp Creole & Bayou Swamp Sauce
This is a dish that's definitely more about the spicy broth. This rich Cajun Bayou dish is commonly craved at 3:00 am by those who may have over indulged on Bourbon Street. Those of us that have, usually find ourselves in desperate need of hot spices, salty thick broths, hearty meats and super thick slices of soft absorbant garlic bread. This dish definitely satisfies and certainly sobers one up! Phenomenal work students!

Okra and Tofu Hamburgers with Miso Sauce
I didn't have any meat, so I tried making burgers with tofu.If you drain off too much water from the tofu, the burgers won't be soft and fluffy. If the burger mixture is too soft, adjust with katakuriko potato starch flour. These are delicious with teriyaki sauce or ponzu sauce too. Also good with onion and shiso leaves instead of okra! Recipe by Katsurachan

Pesto Genovese & Bell Pepper Pasta Sauce
I made this upon request. Tomato sauce with baked paprika and homemade pesto genovese makes a really delicious sauce. There's no cheese in the pesto genovese, so I add it in.If you mix the paprika in the food processor for 10 seconds, some grains will remain. To get it smooth, alternate between on and off for a few seconds. It's plenty delicious without cream, but don't forget the olive oil. Recipe by Brandy

Chicken with Nanban Sauce
I added nanban sauce to my favorite chicken!-Once fried, place the chicken into the tray with the vegetables and sauce while still hot. This will allow the sauce to soak into the chicken.-Bring the chicken to room temperature before deep-frying.-Cutting the chicken to an even thickness will prevent uneven frying.-If you cut into the thick section of the chicken, it will cook faster. Be careful not to burn it. Recipe by Cooking S Papa

For Lunch Boxes: Rolled Omelettes with Sweet and Salty Soy Sauce
My family loves the taste of salty and sweet soy sauce. So the base is the same amounts of sake, soy sauce, mirin and sugar! The rolled omelette is also the taste of salty sweet soy sauce. For myself or for my family, I put 1 teaspoon of soy sauce, and for my husband's lunch box, I put 2 teaspoons of soy sauce.Adjust the amount of seasoning as you like.Strain the egg if you have enough time (in the process 2). Recipe by Stylish Mama

Eggplant, Bell peppers and Chicken with Sweet and Sour Sauce
Green bell peppers and eggplant were in season this summer and autumn in my garden!I added some chicken breast that was on sale for around 100 yen ($1) to make dinner! It looks like sweet and sour pork so I cooked it using a similar sauce. It'll taste better when cooled if you use just a small bit of sauce. It's delicious in bento, too!-It's nice even without doubanjiang spicy bean paste!-Substitute chili oil or ichimi togarashi (japanese red chilli pepper) for the doubanjiang spicy bean paste.-Adding extra bamboo shoot, carrot, onion and shiitake mushrooms would be perfect. Like sweet and sour pork!-Do not stir fry the bell peppers too long or they'll lose their crunchiness.-Reduce the sauce at the end so that ketchup and vinegar are less acidic. Recipe by moj

All-Purpose Traditional Japanese Sauce (Dashi Soy Sauce)
I learned this from a friend who is a great cook, and have been using it every since. I modified the amounts so that it's easy to make.If you store the sauce in an airtight container in the refrigerator, it will keep for a long time, so there's no need to worry about a best-by date.Combine with sugar and reduce to make a sweet-savory sauce. Add vinegar to make a dipping sauce for gyoza dumplings. Dilute with water, add a little mirin and salt and bring to a boil to make a noodle soup for udon or soba. You can use it generously in simmered dishes as well. Recipe by Kinakorin
