My hubby loves cucumber pickles. I thought of using other vegetables that would taste similar to cucumbers but yet has a higher nutrient content. Inspired by one of the recipes posted on @cook_1823220 (Cookpad.japan)
Cooking Instructions

Cut celery diagonally and place in a large ziplock bag. Add in salt and massage. Then squeeze out air and placed it under a heavy object for 1-2 hours in the fridge.

Pour away the water collected in the ziplock. Then add in the rest of the ingredients. Mix well and enjoy! Will taste even better the next day!

Homemade Pickles That Keep For A Long Time
I've been making pickles this way for 10 years. It's great to be able bite into a sour pickle whenever you feel like it. Most recipes call for an equal amount of water and vinegar, but if you use straight vinegar, these pickles will keep for over a year.
