Celery Pickles

I received celery pickles as a souvenir and it was great. So I tried to make it at home easily. The souvenir version may have had more soy sauce.
Once cooled completely, enjoy. It doesn't require much salt. Adjust the amount of salt or soy sauce if you prefer a saltier taste. For 1 stalk of celery. Recipe by twin-twin
Cooking Instructions

Remove the leaves off and peel the strings from the celery. Cut the stalk diagonally 1 cm thick.

Put the celery and salt in a bag and rub together until every piece of celery is mixed with salt evenly.

Put sesame oil and soy sauce and rub together evenly. Tie the bag and chill in the fridge until it has cooled down about 1 hour.

I have been using this recipe for a long time. It is very easy to adjust to your own taste and you can use any vegies you prefer. This amount here makes about 3 pint jars of pickle. Good for cheese and crackers, sandwhich spread and goes great with corned beef. In this recipe I used cauliflower, zucchini, red and green pepper/capsicum, celery and onion.
