This was so refreshing and delicious! Cutting it in spirals takes some time but the result is worth it! I would definitely make a double portion next time :)

Ingredients

  1. 2Japanese cucumbers
  2. Pink salt
  3. 2 tspChili flakes
  4. 2 tsptoasted sesame oil
  5. 1.5 tspsoy sauce
  6. 2 tspmirin
  7. 1 tspbrown rice vinegar

Cooking Instructions

    Cut cucumbers into spirals by lining them up with 2 chopsticks. Salt and let sit for 10 mins.

    Drain off the water from the cucumbers and rinse well. Pat-dry.

    Mix all other ingredients with cucumbers in ziplock bag. Done!
