Ingredients

2-3 Hours
10-12 servings
  1. 2 1/2 lbsRed Potatoes (Cubed)
  2. 10Eggs (Hard-Boiled - Chopped - Egg Yolks Reserved)
  3. 1 lbBacon (Cooked - Crumbled)
  4. 1/2Red Onion (Diced)
  5. 4 StalksCelery (Diced)
  6. 1 CupMayonnaise
  7. 1 CupSour Cream
  8. Salt (To Taste)
  9. Pepper (To Taste)

Cooking Instructions

    Bring a large pot of salted water to a boil. Add the potatoes and cook until al dente, about 15 minutes. Drain and rinse under cold running water. Set aside.

    DRESSING- In a large bowl, whisk together the mayonnaise and sour cream, mixing until smooth. Season with salt and pepper. Crumble the egg yolks into the mixture. Stir in the bacon, onions and celery, mixing well. Mix in the potatoes and egg whites. Cover and chill in the refrigerator until ready to serve. Stir well before serving.
