Ingredients

2 lbsred potatoes, cut into 3/4" cubes
1 cmayo
1 cshredded cheddar cheese
1/2 cgreen onions, sliced
8 slicesbacon, crisp cooked and crumbled
4 tbspApple cider vinegar

Steps

Boil potatoes until tender, then drain and cool slightly.

While potatoes are cooking, combine remaining ingredients in a large bowl, then add potatoes and toss to coat. Season, if desired, with salt and ground black pepper.
