I wanted to make something to go with Brats and baked beans. I threw this together, thinking the flavors would go great together!

This is a tasty combination of ideas I liked from several potato salad recipes. It has become an often requested item at family gatherings.

My potato salad recipe

Making this for my Labor Day BBQ. I love potatoes with Dijon so I came up with this recipe. My family doesn't like the texture of most onions so I chopped up the green onion very fine so they get the flavor but not too much texture.

Bacon in this potato salad sets it apart from all others! Superior flavor! (This is enough to feed a large family.)

I love the combination of edamame and bacon, so I make this often.It also tastes great if it's seasoned with black pepper.It's delicious if you add some finely chopped processed cheese.If you want the edamame to have bright color, set aside 1/3 and mix them in at the very end to keep the color vibrant. I wanted to make potato salad, but didn't have any ham in the fridge! So I tried using crispy fried bacon instead.If you drain off the fat from the bacon completely and leave it for a while it will become crispier.
